An alternative to the chef’s knife. Great for cutting, chopping and mincing vegetables. The blade has a straighter edge than a chef’s knife and has a blunted sheepsfoot-tip blade with a thinner spine. It can easily slice thin-boned and boneless meats, fish and vegetables.

Originally from Japan, this knife is a relatively new discovery in the West. Japanese knife manufacturers developed it when meat started to feature more frequently on Asian menus. Traditional Japanese knives were predominantly designed for cutting fish and vegetables, while the Santoku knife is much more versatile.
